Charlene Cornejo’s Famous Carrot Cake
Dry Ingredients:
2 cups flour
2 cups sugar
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
Wet Ingredients:
3 eggs
1.5 cup vegetable oil
2 cups shredded carrots
1cup crushed pineapple – drained well
1 cup shredded coconut
1 teaspoon vanilla extract
1 cup chopped nuts
Frosting:
2 packages cream cheese
3 cups powdered sugar
1 teaspoon vanilla
Instructions:
1.) Mix dry ingredients
2.) Fold in wet ingredients
3.) Oil three round cake pans. Pour cake mixture in evenly.
4.) Bake at 350 degrees for 50-60 minutes
5.) Whip frosting while cakes are baking.
6.) Allow cakes to cool then frost
