Bars:1 cup butter
1 cup brown sugar
1/3 cup sugar
3 large eggs
2 tsp orange or vanilla extract
2 cups flour
1 1/2 tsp ground ginger
3/4 cup Craisins (dried cranberries)
3/4 cup white chocolate chips
Frosting:3 oz cream cheese
2 tbsp butter
3 cups powder sugar
1 tsp orange extract
Garnish & Topping:1/3 cup craisins
1-2 tbsp grated orange rind
1/3 cup white chocolate chips
1/2 tsp canola oil
Preheat the oven to 350 degrees. Line 10x15" pan with parchment paper or non stick spray.
Bars: With electric mixer, beat together butter and sugars until light. Add eggs and extract. Add flour, baking powder, and ginger. Then add the Craisins and chips. Spread batter in pan. Bake for 20-24 minutes until light brown. Let it cool completely.
Frosting:
Blend cream cheese and butter until fluffy. Add orange extract and powder sugar and beat until frosting is fluffy. Spread over bars.
Garnish:Use a zester to remove rind from an orange. Sprinkle zest over frosted bars. Sprinkle Craisins over bars.
Topping:Mix white chocolate and oil. Microwave for 1 minute, stirring every 15 seconds. Use a fork or whisk to drizzle the white chocolate across the bars. Allow the bars to set for one hour.
